Chocolate Spice Cookies – Makes about 30 cookies.
Ingredients
130 grams – dark chocolate, chopped.
300 grams – plain flour
1/4 cup – Dutch cocoa
1/4-1/2 tsp – Chilli powder
1/2 tsp – ground cinnamon
1/4 tsp – ground cardamom
120 grams – Butter (at room temperature)
3/4 –caster sugar
1/2 tsp –vanilla essence
1- egg
fine zest – 1/4 an orange
Method
Put the chocolate in a heat prool bowl and gently melt over a pot of simmering water..Set aside to cool
Cream the butter, sugar and vanilla together until pale and creamy
Add the egg, then mix with cooled chocolate
Combine the dry ingredients and fold in egg mixture
Tip in the dough onto the bench and roll into 2 logs about 2 cm in diameter
Wrap in plastic wrap and refrigerate until firm, but not solid
Preheat the oven the 180*C
Slice the dough into 1 1/2 thick rounds and place on a lined baking tray
Bake for 7 minutes then carefully turn them over and cook for another 3-4 minutes
Don’t underestimate this savory cookie, if you a want a spicy bite in middle of a dessert pool, this cookie is the best choice. I have added half tsp of all spice powder to the cookie. If you still didn’t try chocolate and chilli in your baking, you are missing something hot! 🙂
