Banana cupcake

   The first time i ever ate banana bread was in my pg hostel. When my friend pranathi returned from hyderabad….(pranathy is soft and no bad habit girl…) She offered me few pieces from bread loaf…Later she was too kind to let me have entire loaf at one go.. I still wonder how good she is!!!!!!!!!!!!….. I became big fan of banana bread, started chasing for recipes of banana bread which tastes like wht i ate…I almost tried around six-seven recipes and happy to share the best one with u.. I give u more tips full stretch with my failure stories…

                 I dont know why they call it banana bread not a banana cake..Might be rhythmic?..                                                          Recipe Courtesy:Joy of Baking

     I halved the recipe, since i had one banana and an egg…

Ingredients

1/2 cup  Walnuts or pecans, untoasted

3/4 cups  All-purpose flour

1/2 cup granulated white sugar

1/2 teaspoons baking powder

a pinch of baking soda

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1 egg,  beaten

1/3 cup unsalted butter

1 ripe large banana (about 1/2 cup)

Quater tsp of Vanilla essence

Method

1.Whip the banana and Vanilla essence in blender to fine paste

2.Mix all the dry ingredients well

3.Melt the butter to fluid 

4.Roast the nuts in same pan in which u melted the butter 

5.Beat the egg fluffy and keep aside

6.Mix the dry ingredients, banana, melted butter and nuts well

7.Add the beaten egg and fold the dough

(Taste the dough, it tastes yumm..If u want more sweet, u can add sugar now)

8.Preheat the oven for 10 minutes at high temperature

9.Pour the dough into greased baking pan

10.Bake them for 20 minutes at high(350*) or until it turns brown.

Some tips
Do not smash the banana into pieces, make fine paste
If the dough is not semi-flowing consistency, adjust with adding milk
Dust the nuts with flour as it spreads all over the cake
Cinnamon gives nice zest to the cake
