Expresso cupcake

One can never miss refreshing their senses with coffee aroma and the flavor any day.. I am not very coffee person, but I was the same like others. Coffee is most consumed beverage, one cannot miss drinking before starting the day. Last few years I stopped drinking coffee at home. I drink occasionally only when I am travelling. I started trying coffee flavors here.

Yields:11-12 cupcakes

Ingredients

Flour-1 cup

Unsweetened Cocoa powder – 1/3 cup

Baking Soda – 1/2 tsp

Salt-1/4 tsp

Butter,melted or Oil – 1/2 cup

Eggs-2

Vanilla Essence – 2 tsp

Instant Coffee powder-1 tsp

Hot Expresso-1/2 cup

Method 

1.Preheat the oven for 375*F. Line the muffin tin for paper liners.

2.Sift flour, sugar, cocoa, baking soda and salt into a bowl.

3.Beat sugar and eggs for 2-3 minutes and then add the melted butter and vanilla essence.

Beat again for one minute.

4.Add the flour mixture into the wet mix in three portions.

5.Make hot espresso with your favourite coffee. Mix coffee powder to it.

(To make expresso, boil 2 tbsps of grinded coffee powder to 1/2 cup of water for 2-3 minutes. Filter it and use it in place of expresso)

6.Gently fold in the expresso into the cupcake batter.

7.Using a large spoon, distribute the batter into the prepared muffin tins

8.Bake them in preheated oven (375*F) for twenty minutes
